The batter is prepared by soaking urad dhal and raw rice together and grinding either a coarsely ground rock candy. Do not use icing sugar as it contains corn flour.

Secondly, Take the curd in a large bowl a d beat well with a beater. Don’t add water. Then, going the coconut and add to the curd. Now, add the cut green chilly and ginger to the curd. After that add salt and add the seasonings and mix well. Arrange the tray and then place all the soaked vadais on a serving tray.
Finally, pour the curd mixture on it evenly Add the coriander leaves. Refrigerate for one hour and then serve.
Ingredients: for preparing butter:Urad dhal–200 grams, Rock Salt for the batter–3/4 tsp Green chilli for batter–1
for preparing Curd mixture: Curd–1/2 litre, Grated coconut–5tsp, Green chillies–3, Ginger–1inch, Salt –1/2tsp, Sugar–1/2 tsp, Coriander leaves, Mustard seeds, Urud dhal, Jeera, Curry leaves Oil–2tsp.

Take urad dal 1kg, soaked in water from 9hours to 13hours to get vadai, Crispi. Then grained the dal up to cream level, make sure not put more water. Add water Step by step 1 to 2 tea spoons of water. Continue graining upto smoother level of cream. Just mix till 10 to 15minute for water dried, thick and heavy. we don’t want to add any preservative for dryness.
Add two green chilly, one big onion two tea spoons of cumin seeds, one tea spoon of black pepper powder. half tea spoon of chilly. Mixed with creamy urad dal. At last add some salt as per your taste.
