Kalkandu vadai is a traditional Chettinad cuisine with special sweet vada. It is usually prepared for all the Chettiar household occasions and festivals like Diwali and Pillayar nombu. It is crispy outside and soft inside.

Secondly, Take the curd in a large bowl a d beat well with a beater. Don’t add water. Then, going the coconut and add to the curd. Now, add the cut green chilly and ginger to the curd. After that add salt and add the seasonings and mix well. Arrange the tray and then place all the soaked vadais on a serving tray.
Finally, pour the curd mixture on it evenly Add the coriander leaves. Refrigerate for one hour and then serve.

Take urad dal 1kg, soaked in water from 9hours to 13hours to get vadai, Crispi. Then grained the dal up to cream level, making sure not to put more water. Add water Step by step 1 to 2 teaspoons of water. Continue graining up to the smoother level of the cream. Just mix for 10 to 15 minutes for water dried, thick and heavy. we don’t want to add any preservatives for dryness.
Add two green chilly, one big onion two teaspoons of cumin seeds, and one teaspoon of black pepper powder. half teaspoon of chilly. Mixed with creamy urad dal. At last, add some salt as per your taste.
