குதிரை வாலி சாம்பார் சாதம் | kuthiraivali sambar rice in tamil :

Firstly, Soak the millets in enough water for about 3hours. Then, Dry roast all the ingredients for the sambar powder and grind it to a fine powder.

Secondly, Heat a kadai with some oil, add mustard seeds, cumin seeds, asafoetida powder, curry leaves, and shallots, and Saute them. Add carrots, beans, peas, potato, drumstick, salt, and turmeric powder. Saute for 5 minutes. Add water and close and cook. Add tamarind puree and sambar powder.

Thirdly, Boil it for 10 minutes and keep it aside. Pressure cook soaked millets, toor dals, with some turmeric powder for 4 whistles.

Finally, Bring the sambar to a boil and add the cooked millets. Mix well and cook it for 10 minutes.

Now you can Serve kuthiraivali sambar rice with a smile.

குதிரை வாலி கிச்சடி | Kuthiraivali Veg Kichadi | Barnyard millet dal kichadi: 

Millets are more minor in carbohydrates, and rich in fiber, calcium, iron & nutrients. So taking millet in our recipe reduces weight & gives more strength. This kichadi which is rich in the goodness of all nutrients is very healthy.

Firstly, we want to take one cup of kuthiraivali rice and moong dhal and then mix them both. Remember, to rinse the millet and dhal 3 times and set them aside.

Secondly, set the instant pot to sauté mode. In the next step, add ghee to the hot pot and let it melt then add mustard with urad dal, and sauté until all the mustard has popped. Then, add cumin, green chili, and diced onion. when the onion starts to look glossy, add a ginger slice, add curry leaves. After, the added ingredients have been cooked add diced tomato. And Salt as per your taste. Sauté 2 minutes. After, the tomato becomes soft, add turmeric powder. Saute and mix continuously, then add cut green beans, add diced carrot, add green peas, add cumin powder, and add chilly powder. Saute and mix continuously, and add Asafetida. once, the masala is blended well, add water, add cilantro.

Thirdly, and most important after the water is boiled add the washed millet and dhal. set instant pot to porridge mode for 15minutes. close lid, let it cook for 15min, quick-release pressure. Now,

குதிரைவாலி அரிசி தோசை | Barnyard millet Dosai :

In any recipes

Firstly, for cleaning, we want to rinse the Barnyard millet 2 to 3 times in running water. Then, soak the millet separately. At the same time, take the ingredients unpolished whole urad dhal, fenugreek seeds, and Javaris. Then, soaked ingredients separately for 3 hours.

Secondly, after 3 hours, mix the ingredients and grain. before grinding drain the water. and most importantly add a small amount of water when it grinding because we want smooth paste batter for making doasi. set aside.

Thirdly, grained the soaked millet, following the same procedure above. Fourthly,  mix the dal batter and millet batter, add salt and mix well.

Now, try to maintain the batter in a warm draft place and wait for 10 – 12 hours.

Finally, We can use this fermented batter for making dosai by our traditional methods like heating the pan then, spreading half a cup of the batter, and maintaining light heat for about half of the minute on each side, until light brown. add some oil as per your wish.  Remember, we can use this fermented batter, for two days, when we store it in the refrigerators.

குதிரை வாலி  தக்காளி சாதம் | Kuthiraivali tomato rice :

Firstly soak the kuthiraivali rice in water for up to 15 to 20 minutes. Then, cooked in our traditional way of cooking. add some salt and oil to the rice before cooking. Special recommendation, try to avoid a pressure cooker for cooking. Here, using an open pan is advisable. After, cooked dry the water and spread the rice on a separate pan. Set aside.

Secondly, heat the pan and add some oil, then add mustard seed next, add curry leaves and add chopped onions and sauté till golden color. After, gets golden color add chopped tomatoes, add sambar powder, add turmeric powder, and salt as per taste. Most, importantly, when sauté should maintain low flame till the tomatoes become mushy. At last, add garam masala to temper.

Finally, add cooked kuthiraivali into the above preparation.

Now serve the healthy food Kuthiraivali tomato rice

with raita or simple fried appalam or vadagam.

Ingredients: Kuthiraivali rice  1/4 cup, Onion 1 (small size), Tomato    1 (small), Sambar powder   1/4 tsp, Turmeric powder a pinch, Garam masala a pinch, Oil     1 tsp, Mustard seeds   1/8 tsp, Salt to taste, Curry leaves few.

குதிரைவாலி உப்புமா | Kuthiraivali upma : 

Firstly, for cleaning purposes rinse the millet and then dry water from the millet completely. Then, cooked in transnational way of methods, For your convince you can use a pressure cooker or open pot. After cooked. set aside.

Secondly, take the separate kadai for frying. now, heat the kadai pour some oil after the oil is heated add onion, green chilly, and ginger. continuously mix the saute, when the onion gets golden color add veggies and sauté for 2min. Remember to maintain the low flame. thirdly, add some water and salt for taste. while boiling water adds cooked millet and mixed well.

Finally, close the kadai, and wait for 8 to 10 min. even now flame for cooking. After all, the water dried now you can switch off the flame.

Now, we got a healthy UPMA. serve with any spicy chutney or sweet recipes.

Ingredients: Barnyard millet – ½ cup, Water – 1 & ½ cups, Onion (skip on fasting days) – 1, carrot, finely chopped – 2 tbsp, Beans, finely chopped – 4, Ginger, very finely chopped – 1 tsp, Green chili – 2, Salt – As needed, Coconut oil/ or any cooking oil – 1 tbsp, Mustard – ¾ tsp, Urad dal – 1 tsp, Channa dal – 1 tbsp, Curry leaves – 1 sprig
